Vegan Caesar Salad with Scratchings Croutons

Ingredients
For the Salad:
1 large head of romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 small cucumber, sliced
1/4 cup red onion, thinly sliced
1/2 cup Vegan Scratchings (to replace traditional croutons)
For the Vegan Caesar Dressing:
1/2 cup vegan mayonnaise
1 tbsp Dijon mustard
1 tbsp lemon juice
1 clove garlic, minced
2 tsp capers, finely chopped
1 tsp soy sauce or tamari
1/4 cup nutritional yeast
2 tbsp olive oil
Salt and pepper to taste
Instructions
Prepare the Dressing:
In a small bowl, whisk together the vegan mayonnaise, Dijon mustard, lemon juice, minced garlic, capers, soy sauce, nutritional yeast, and olive oil.
Season with salt and pepper to taste. Adjust the consistency with a splash of water if needed.
Assemble the Salad:
In a large salad bowl, toss the chopped romaine lettuce, cherry tomatoes, cucumber, and red onion.
Add the Scratchings Croutons:

Dress and Serve:
