**Ingredients:**
- 1 cup of Yorkshire pudding mix
- 1 cup of plant-based milk (e.g., almond, oat, or soy)
- 1 tbsp maple syrup (optional)
- 1 tsp vanilla extract
- Fresh berries (strawberries, blueberries, raspberries)
- Maple syrup or agave for drizzling
**Instructions:**
1. Preheat a non-stick pan over medium heat.
2. In a mixing bowl, whisk the Yorkshire pudding mix with plant-based milk, maple syrup, and vanilla extract until smooth.
3. Pour small amounts of batter into the pan to create pancakes. Cook for 2-3 minutes on each side or until golden brown.
4. Stack the pancakes, top with fresh berries, and drizzle with maple syrup. Serve warm and enjoy!
