Ingredients (Serves 2):

  • Bowl Base:

    • 150g cooked quinoa, couscous, or barley (for a hearty, gluten-free option, use quinoa).

    • 100g mixed salad leaves (e.g., spinach, rocket, or kale).

  • Fresh Additions:

    • 6 cherry tomatoes, halved.

    • 1 small cucumber, sliced into ribbons or rounds.

    • 1 small red onion, thinly sliced.

    • 1 apple, thinly sliced (Granny Smith or Pink Lady for a tangy-sweet flavour).

  • Accompaniments:

    • 50g vegan cheese, cubed or shredded.

    • 3 tbsp chutney (e.g., caramelised onion or apple).

  • Dressing:

    • 2 tbsp olive oil.

    • 1 tbsp balsamic vinegar.

    • 1 tsp Dijon mustard.

    • Salt and pepper to taste.

Instructions:

  1. Prepare the Base:

    • Cook the quinoa, couscous, or barley according to package instructions and let it cool slightly.

    • Divide the mixed salad leaves between two bowls and top with the cooked grain.
